Possibly the oldest surviving
bodega in Jerez and which uniquely makes wine only from Pedro Ximénez,
the firm is celebrating the centenary of its solera, established in 1918. The
wine is thus a blend of every vintage since then, 100 in all. Until then the
wine was sold without any reference to its age but in 1918 the solera was
registered with the Commission of Wine Producers and Exporters, the forerunner
of the Consejo Regulador. Since then around 20% has been extracted annually for
bottling after ageing for at least 15 years, and this edition with its special
label numbers 10,000 bottles, each of which comes with a guarantee certificate with
photographs of 100 vintages.
