Pale to mid strawy gold, legs.
Dry, quite serious, saline flor elements with slight traces of autolysis and oxidation, fruity background note of Palomino, quite big.
Serious, full, dry, complex, certainly older than the usual 4 or 5 years, some bitterness from the flor and quite intense with hints of straw and bitter almond, very long.
Fine quality. Really shows the merits of not tasting finos too cold. As far as I can gather it is only about 4-5 years old, and other people's tasting notes would confirm that, as do my own from a few years ago. I suppose that this bottle must have been around for a while, yet it is in great condition and must have benefited from its time in bottle. If well stored, why not? I have heard of finos aged in bottle longer than usual which turned out well if slightly older-tasting.
